NKY School District to Participate in Cook for America Culinary Boot Camp

Fueled by funding from Interact for Health, a catalyst for health and wellness, local food service staffs will participate in a five-day Cook for America® Lunch Teachers® Culinary Boot Camp beginning on Wednesday, July 29 at Dayton High School. 

Personnel from Dayton Independent Schools and Franklin County (Indiana) Schools, along with three Cincinnati-based Catholic Inner City Education schools - Corryville Catholic, St.Boniface, and Holy Family - will cover all basic competencies necessary to prepare food service personnel to run professional, cooked-from-scratch school lunch operations.

Teams will train in areas including food safety and sanitation; culinary math; basic knife skills; foundational cooking techniques related to proteins, grains, legumes, vegetables, sauces, and baked items; menu planning; and time management.

The Culinary Boot Camp is the second phase in a three-step process which included an initial assessment of food service departments in each district. The final step will include Cook for America consultation with each district to in implement the new strategies to serve students healthier choices when new school year begins in Fall 2015. The three selected districts collectively serve more than 4,500 area students.
